Home canners and food service workers each have new classes this fall, taught at the Brazos County office of the Texas A&M AgriLife Extension Service, 4153 County Park Court in Bryan.
Canning, one dish at a time
The Preserving the Harvest: Stocking the Pantry series runs from Nov. 4 through May 3, with five hands-on classes. Sessions run 9 a.m. to 2 p.m.; the series suits beginners as well as experienced canners, according to AgriLife Extension.
The schedule:
- Nov. 4: cranberry sauce and turkey
- Dec. 9: beef stew with vegetables, and pie filling
- Jan. 19: pickled yellow pepper rings and spicy pickled beets
- Feb. 23: sweet potatoes and collard greens
- May 3: jalapeño jelly and salsa
A single class costs $30, and all five cost $100. Each class takes no more than 20 people. Sign up and pay online at tx.ag/PreservingtheHarvestClasses. Anyone paying in person can bring exact cash or a check written to Brazos FCS.
Food manager certification
The same office will hold food protection management courses on three dates: Nov. 16, Dec. 21 or Feb. 15. Each runs 9 a.m. to 6 p.m. and prepares students for the Texas Food Manager Certification exam. It is aimed at restaurant managers, food service and school nutrition workers, child care providers and others in charge of food safety, the agency said.
The one-day course with the exam is $115. Taking only the exam is $65, and a retest is $55.
For an added $25, the exam can be taken remotely under a live online proctor; that option requires a laptop or desktop computer equipped with a microphone and webcam, a dependable internet connection, a valid photo ID, a private room and an appointment booked ahead of time. Students must sign up at least 10 days before a course to be guaranteed an exam seat.
